Aubergine has held both a Michelin star and four AA Rosettes for over ten years at Park Walk, Chelsea. Miles Nixon now oversees the kitchens at both Aubergine in Chelsea and Aubergine at The Compleat Angler in Marlow.
In July 1998 Gordon Ramsay left the acclaimed Aubergine Restaurant in London's exclusive Chelsea. William Drabble then took the helm and retained the Michelin star and four AA Rosettes for over 10 years until Miles Nixon took over the helm earlier this year.
Miles Nixon grew up in Suffolk. Starting as an apprentice at The Stafford Hotel in St James's in 1989, he moved on to work at The Ivy before eventually working for Nico Ladenis at Ninety Park Lane.
Miles's passion and creativity and his complete respect of seasonality and the finest ingredients is continually evident in his menus. His dishes continue to awe the restaurant industry and equally delight guests.
