Kam Po But is the Executive Chef overseeing both Ken Lo's Memories of China in Belgravia and Memories of China, Kensington.  Born in Shanghai and coming from a family of distinguished chefs, Chef But trained and worked in many of the leading restaurants in China and Hong Kong including the highly regarded Mandarin Oriental Hotel, before moving to London in the 1980s.  It was here that he met the late Ken Lo, one of Britain's leading authors and advocates of quality Chinese cuisine. 

Soon after, Memories of China was born and Chef But has been at the helm ever since.  Widely acknowledged as one of the leading authorities in Chinese cuisine, Chef But regularly showcases his talent at food festivals and on television appearances.  Chef But also recently helped launch Memories of China in Bahrain, a true testament to his outstanding reputation as being one of the best Chinese chefs.

"Good Chinese food should be subtle but evocative" he says, and nowhere is this better evidenced than in his eloquently prepared dishes.
